Vanilla Ice Cream

Vanilla Ice Cream


  • 3 frozen bananas
  • 1 tin full fat coconut milk
  • 1 tbsp vanilla extract
  • 1/3 cup maple syrup or sweetener of your choice


  • Mix all ingredients in a blender until smooth
  • Pour the mixture into a freezer friendly container and let set overnight
  • Serve with meringues, blueberries, fresh mint leaves and chocolate drizzle
